I was successful doing this using Adobe Illustrator. After multiple trials (and this is mentioned in the 2021 WWDC video about creating custom symbols) you need to start with a path and then copy it in each of the other variants and adjust each point on the path instead of redrawing the shape entirely. Or if you need to draw a custom shape, start with one shape and then adjust the points on the path manually for each other variant.
