Thank you though for your explanation regarding the AccentColor in the Assets catalogue, that must be the way Feedback Assistant is doing it as when I choose a specific accent color in system settings rather than using "Multicolor", the highlight color does indeed switch to the new color. So it seems maybe there is no way to dynamically change the accent color.
