I am seeing this too. The iPhone 11 simulators keep getting "deleted" from the simulator list. I believe this is down to an issue in CoreSimulator 732.17, but I am still testing that theory.

Yeah, I'm pretty sure xcrun simctl erase all is actually deleting the running simulators in CoreSimulator 732.17.
