Same problem here. When Siri language is set to Cantonese, all Chinese will become Cantonese even when zh-CN is specified. I also found that the spoken dialect are actually controlled by another setting : Accessibility-> Spoken Content->Voices->Chinese->Spoken Language. This is not my expected behaviour. Just want to share my finding.
