Updating to macOS 15.4.1 (24E263) helped — I can now inspect variables with lldb on iOS Simulators, and the LLDB Server doesn't crash on Xcode 16.2 (16C5032a). Haven't checked how Xcode 16.3 fares, though — I think I've had enough Xcode reinstallations for the week
