The purpose of Server notifications are to receive updates on transactions and status changes that can occur outside of your app - such scenarios only apply to auto-renewing subscriptions(ARS). While for the other IAP types, its primarily limited to refunds and access changes due to Family Sharing.
Can you share the benefit of receiving a server notification for a purchase of a non-renewing subscription (NRS)? Is there anything you found that gave you the impression you should expect a notification for a NRS?
Note: The subscriptions management page applies only to ARS, as a customer needs to be able to cancel that subscription and if applicable, change the level of service. While that doesn't apply to a NRS, therefore is not visible on that page.
