I have the same problem! Since macOS Monterey 12.1 I can't close the Mac without the screens turning strangely coloured for a moment and then comes a kernel panic crash. I also own a Macbook pro 16 (2019 model) and have it connected to two monitors (the first is a Dell, the other a Samsung monitor).
