I ended up deleting simulator runtimes from Xcode to reduce the size of System/Library/AssetsV2
I had some old ones like iOS 15 and iOS 17 runtimes.
From my disk analyser tool, it looks like each runtime is about 8.5-9 GB. After deleting some, it went from about 95 GB to 44 GB. Still quite hefty, but you probably don't need that many unless you're testing on every single simulator version.
