When you go to the Asix page for drivers there are two versions of the AX88179 driver. The one that says "AX88179 USB3.0 to 10/100/1000M Gigabit Ethernet Controller [NOT FOR NEW DESIGN!!]" worked for my UGREEN USB Type-A Ethernet adapter. Download Apple macOS 12 above For Intel and Apple silicon platforms, version 2.5.0 here: https://www.asix.com.tw/en/support/download I kept seeing that this device should work plug and play, but apparently that is for the AX88179a version that works "Using macOS native CDC-NCM driver". Check in System Report > USB for what version you have.
