Thank you for the response! Unfortunately the CarPlay Simulator in the Additional Tools only appears to work with connected phones, it does not connected to the DeviceHub in any way that I can find. This means I have to test CarPlay from a hardware device, making it difficult to iterate on changes from the iPhone simulator like was previously possible.
