I have the same problem. I just updated to TVos 14.2. Prior to the update I could see and connect to any of my sonos speakers in my home. After the update my Apple TV only provides an option to connect to TV speakers. I also made sure my sonos speakers were added to homekit, but that did not resolve the issue.
