Thank you, Albert! Xcode was NOT listed in Developer Tools. The only one there was Terminal.app, and it was switched off. I switched it on as well. I added Xcode.app and switch it on. Xcode did not have Full Disk Access either, so I added that. I'll see if the crashes continue!

My concern is with simulators, not physical devices. Thank you for that clarifying question. I just submitted feedback FB23226346.
