Just how comprehensive is HR data on Healthkit for iPhone?

Title is fairly self explanatory. I know that I can get real time HR data on devices like the Apple Watch, but I can't find any resources that mention just how comprehensively that data is stored in the Health app.
How much variation can I expect?
Does this work outside of recorded workouts?

I don't know how they request those data. Directly or from health app ?
I don't need to view the data on the iPhone, I simply need access to the data for calculations. Perhaps it could be recorded on the watch and then synced on the phone?
