Try removing the transparency or changing the alpha of the line color to 1.0. That seemed to be a work around for now, but it appears to be a bug for me too.

This does not appear to be fixed in watchOS 10.5, at least my watch is not appearing in Xcode after upgrading. I did get the Trust prompt on my watch which is an improvement.

installing watchOS 10.5 and iOS 17.5 seems to have fixed this issue for me.
