Thank you, Kjuly, this was it. Our header video's poster frame had been stuck in "Poster Frame Processing" since the version was approved. We removed that video from the header on the default product page and on our custom product pages, and 1.0.5 appeared on the App Store in under two and a half hours. The video itself stays in the Asset Library.
