Ok @Kjuly I confirm on my end, that resolved my issue, I add one language which was still in processing (the new Header video asset), i simply removed it, and my version started to show up on the stores, all good! Thanks man, next time i'll post on the forum before actually sending a support request, that clearly give me better support XD. Thanks again! BTW, my app is alert.camp, could be handy if you ever do camping in Canada or the US.

Thanks for your answer, that's pretty interesting, my guts feeling was telling me this is the issue, as it started as I added those new creative, which were super hard to get processing, many got errors even if using the same pipeline for all my languages, so very flaky on Apple side on this. I find out that I had one language indeed that is still processing, i removed it from the distribution (i can't even deleted it from Asset library somehow), hopefully that help works.
