If it has taken two days to install, something is most likely wrong unless you are on an ancient internet connection. You can still install operating systems over USB on non-Apple Silicon macs. You have to boot into recovery first, then start up security and set to allow from USB and no security. Still requires an internet connection at some points of that process but installing from USB is indeed possible. From a education management perspective it certainly adds more time.
