It’s been a day since I launched my first app and i saw that the app language is different in the appstore from the one i set on AppStoreConnect, i only have the italian language but for some reason in the store its listed as an english app

Where exactly is it listed as english app ?
On which country appstore do you look at it ? Italian appstore ?
What is the development language of your app ? Maybe english by default.

select the Project (blue icon on the top of Xcode file browser)
Select Project (not Targets)
Select Info tab
Look in Localization part
