How to deal with price change that has not fixed schedule

Apple announced they will change price and tax for apps and in-app purchases at "As early as October 5, 2022".

Our app shows in-app purchase price as we set, not fetching from the app store. Therefore, if App Store changes price users will experience price difference between price shown on app and price that shows in purchase confirm page.

Since Apple didn't announce actual time when they'll change the price, it's tricky to determine when to change the price shown. We are currently concerning about blocking purchases from iOS at October 5 00:00(in our region time), but in the worst case, Apple may not change the price for pretty long time. That will occur us serious sales loss in iOS and user inconvenience.

I assume there are more developers having same issue around the world. I would be very pleased if I could get some ideas or opinions about this issue.

No, I imagine that most developers will have done it properly and fetched the prices from the App Store.

You need to update your app to do it properly.
