Builds and versions are different things. You can have multiple builds of the same version. XCode will not let you upload a version that is already been uploaded if the build numbers are the same. I get your frustration, but trust me - this stuff works, and it works well. You just need to educate youtself on how to use it.

You could invite someone to test your app via TestFlight and ask them to generate screenshots for you at that size.
